Thurston is the owner and operator of the flour mill in Paws during Ultima VII.
When the Avatar met him in Ultima VII, Thurston expressed his world view. He was a simple man, driven by his work, especially since Paws had become a rather poor area. He expressed his loneliness to the Avatar if pressed, and eventually admitted to having an infatuation with Polly the barkeep at The Salty Dog. He also thought about joining the Fellowship but he had a really uneasy feeling about them, despite their seeming good intend. In the end, the Avatar helped Thurston and Polly to overcome their shyness and a relationship grew between these two.
Thurston also sold the Avatar flour for 12 gold pieces a sac and accepted the wheat delivery the Avatar brought him from Camille, a woman that he thought high of because of her belief into the Eight Virtues.
